A nourishing slice infused with the soothing botanicals of Lady with the Lamp. Turmeric, ginger and honey come together in a golden, wholesome treat that’s perfect with a warm cup of tea.

Ingredients
Final Base
• 1½ cups rolled oats
• 1 cup plain flour
• ½ cup shredded coconut
• ½ cup chopped almonds
• ½ cup sunflower seeds
• ½ cup pitted Medjool dates, finely chopped
• 1 tsp ground cinnamon
• ½ tsp fine sea salt
• ⅓ cup melted butter
• 2 tbsp honey
Golden Filling
• ½ cup honey
• 2 tbsp butter
• ⅓ cup hulled tahini
• 1 tsp vanilla extract
• 1 tsp ground turmeric
• 1 tsp ground ginger
• Zest of 1 orange
• ¼ cup very strong brewed Lady with the Lamp tea
• 1 tbsp finely ground Lady with the Lamp tea
White Chocolate Topping
• 150g white chocolate
• 1 tsp coconut oil (optional, for a smoother drizzle)
To Finish
• Chopped pistachios
• Dried calendula petals
• Extra finely ground Lady with the Lamp tea (optional)
Method
1. Preheat the oven to 170°C fan-forced. Line a 20cm square baking tin with baking paper
2. In a food processor, pulse together the rolled oats, plain flour, shredded coconut, chopped almonds, sunflower seeds, dates, cinnamon and sea salt until the dates are finely broken down
3. Add the melted butter and honey. Pulse until the mixture begins to clump together
4. Firmly press the mixture into the prepared tin
5. Bake for 12–15 minutes, or until lightly golden. Allow the base to cool while preparing the filling
6. In a small saucepan over low heat, combine the honey, butter, hulled tahini, vanilla, turmeric, ginger, orange zest, brewed Lady with the Lamp tea and finely ground Lady with the Lamp tea. Stir continuously until smooth and glossy. Do not boil
7. Pour the golden filling evenly over the cooled base and spread smooth with a spatula
8. Refrigerate for 45–60 minutes, or until the filling is firm
9. Melt the white chocolate with the coconut oil (if using) and drizzle generously over the slice
10. Sprinkle with chopped pistachios, dried calendula petals and a light dusting of finely ground Lady with the Lamp tea
11. Chill for a further 15 minutes to allow the chocolate to set
12. Slice into 12 squares and enjoy

Extra Golden: Add an extra ½ teaspoon turmeric for a richer golden colour and stronger anti-inflammatory flavour
Citrus Bright: Add the finely grated zest of one orange to the filling for a fresh citrus lift
Coconut Crunch: Sprinkle toasted coconut flakes over the white chocolate before it sets
Honey Drizzle: Finish with a light drizzle of warm honey just before serving

Using hulled tahini gives this slice a beautifully smooth, creamy filling with a mild nutty flavour that lets the warming botanicals of Lady with the Lamp shine. Finely grinding the tea before adding it creates delicate botanical flecks and infuses every bite with flavour.
