Dreamy Shortbread

Buttery, melt-in-your-mouth shortbread infused with Paper Moon and dipped in rich chocolate for those finishing touches. The perfect afternoon treat with a warm cup of tea.

Makes: 18–20 biscuits
Prep Time: 20 minutes (+45 minutes chilling +15 minutes freezing)
Bake Time: 18–22 minutes

Ingredients
• 1 cup unsalted butter, softened
• ¾ cup icing sugar
• 1 tsp vanilla bean paste
• 1 tbsp honey
• 2 cups plain flour
• ¾ cup cornflour
• ½ tsp fine sea salt
• 4 heaped tsp Paper Moon tea, finely ground

Method
1. Beat the softened butter, icing sugar, vanilla bean paste and honey together until pale and fluffy
2. In a separate bowl, combine the plain flour, cornflour, sea salt and finely ground Paper Moon tea
3. Fold the dry ingredients into the butter mixture until a soft dough forms
4. Shape the dough into a disc, wrap well and refrigerate for 45 minutes
5. Preheat the oven to 160°C fan-forced and line two baking trays with baking paper
6. Roll the dough to approximately 1.2cm thick and cut into your favourite biscuit shapes
7. Place the biscuits onto the prepared trays and freeze for 15 minutes
8. Bake for 18–22 minutes, or until the bases are lightly golden while the tops remain pale
9. Allow the biscuits to cool on the tray for 10 minutes before transferring to a wire rack to cool completely

*Mrs. Tea Twists
Chocolate Lover: Half-dip each biscuit in good-quality dark chocolate and finish with a pinch of flaky sea salt
White Chocolate Dream: Dip in melted white chocolate and decorate with dried chamomile flowers
Honey Glazed: Brush warm biscuits lightly with honey and finish with a sprinkle of crushed chamomile
Lemon Lover: Add 1 teaspoon of finely grated lemon zest to the dough for a fresh citrus twist

*Mrs. Tea Tip: Grind the Paper Moon tea to a fine powder while leaving a few tiny flecks. This creates a beautiful speckled finish and allows the delicate botanicals to shine without overpowering the buttery shortbread
